Arabian Summer Drinks - healthy juices, herbal teas, fruit cocktails!


     


These Arabian summer drinks are to be drunk CHILLED

Hibiscus, Apple and Grapefruit


A tangy red drink delicious cold. Packed with vitamin C and bioflavinoids. Arabian women drink hibiscus tea (karkaday) as a women's tonic as it contains iron.

To make: Boil 4 cups of water and steep a handful of dried hibiscus leaves and 4 tablespoons of sugar (optional) for an hour. When cool, chill in the fridge and later add the juice of 2 large grapefuit and the juice of 4 red apples.

Apple, Peach and Cinnamon tea

A refreshing blend of juices and teas, is a combination that is popular in the summer months in Egypt. Make sure the teas are steeped and cooled first, then add the fresh juice!

Add 1/4 teaspoon ground cinnamon to 4 cups of boiled water and add 4 tablespoons of sugar (optional). When cool, add the juice of 4 red apples and two peaches. Serve with a cinnamon stick.

Cairo Pomegranate Cocktail

Served at Khan el Khalili's famous El Fashawy cafe!

Seed a large pomegranate and place seeds in two tall glasses. Blend a punnet of strawberries and add to the glasses. Slice a banana and add slices to the glasses. Pour either fresh chilled hibiscus juice or raspberry cordial (premixed) to the top of the glass. Serve with a spoon!

Mango, Strawberry and Guava Cocktail

Also called the 'honeymooner's cocktail' in Egypt, this decorative drink is as delicious as it is pretty in its three coloured layers - red, orange and yellow. Serve in a tall glass. Belnd separately in three cups - the pulp of 2 ripe mangoes, 3 guava (if guava not available, you can use 2 bananas) and blend a punnet of strawberries. Spoon in the mango first, then the guava, and lastly the strawberry in three layers. Serve with a sprig of mint.

Ayran (Yogurt Drink)

This cooling drink is served before meals to aid digestion. For a healthier tummy, try to use natural youghurt with acidophillius cultures.

Mix 2 cups yoghurt with 1 cup cold water and add salt to taste.
Blend in an electric blender, or beat well together using a wooden spoon. Pour over icecubes and serve chilled.

Lebanese Sahlab

A creamy cold milk cocktail with nuts and spices - often given to children before bed. Great doses of calcuim and magnesium in this drink!

To 4 cups of milk (or soya milk) add: 1/4 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon cardamon seeds, 8 dates, one banana, 1/2 cup of blanched almonds, 1/4 cup raw cashews and 4 tablespoons of honey. Blend with 8 icecubes and serve chilled.

Spicy Egyptian Fenugreek Tea

Good for chest colds and slow circulation

Place 1 tablespoon of fenugreek seeds, a dash of cayenne pepper and and a knob of fresh ginger in a cup of boiling water. When cooled down slightly add a tablespoon of honey and drink warm.

Serves 1

Moroccan Mint Tea

A cooling, refreshing tea for summer nights.

Steep a small bunch of fresh mint leaves in 2 cups of hot water in a teapot for 5 minutes. If you want a stronger tea, add 2 tsp of black Indian tea to the pot or a regular black teabag for a minute. Usually served with sugar (optional) with the mint leaves left in the cup.

Hot Syrian Fruit Compote Tea

A fruity sweet treat, good before bed (you'll be regular by the morning!)

In 2 cups of boiling water in a pan, place 2 dried figs, 4 dates, 4 prunes, one pear, 1/4 teaspoon cinnamon, 1 clove. Simmer for ten minutes until the eater has reduced down to one cup. Strain the liquid and drink the hot fruity compote tea. Set the boiled dried fruits aside, and when cool, refrigerate. You can add these to yoghurt or muesli for breakfast.

Serves 1
Spiced Orange Tea

A fruity tea with warm spice and cloves.

Boil two whole oranges, cut in quarters, in 4 cups of water, uncovered, with a cinnamon stick and 4 cloves for 10 minutes. Add Remove from pan and steep two regular black teabags for a minute. Then add sugar to taste and serve in cups with a cinnamon stick.

Serves 2-3
